Make/mix the cookie dough by first combining the wet ingredients before gently whisking in the dry ingredients. Stir until it juuuust comes together.
If you'd like more orange in your batter, add a drop or two of food coloring.
Chill the dough for about 30 minutes. Scoop 2 tablespoons of dough at a time onto a lined cookie sheet. Flatten your cookie mounds to about 1/4-inch thick.
This recipe makes about 24 cookies, so plan your spacing on the sheets accordingly!
